BackgroundAlpha-amylcinnamaldehyde is a raw material
in the production of perfumes. Alpha-Amyl-Cinnamaldehyde occurs in many essential
oils, especially in jasmine oil. It is a fragrance, which allows the composition
of very true to nature jasmine fragrances in the perfumes industry. Further
it is used as a flavouring respectively flavour intensifier (e.g. in jasmine
tea).
